Katai forged sharpening steel
A sharpening steel does not sharpen a knife, but it ensures that the burrs on the cutting edge are aligned in the direction of the cutting edge, keeping the knife sharp. By running the knife along the sharpening steel several times with the entire blade, it becomes sharp again. It is important to always keep the knife at the same angle. This is done for both sides of the knife, with the front being run along the steel twice as often as the back.
